Izumo - Izumo Soba

The main reason to visit Izumo, of course is to see the Grand Shrine. But while you're here, be sure to try Izumo soba, the area's most famous local dish.
Soba, or buckwheat noodles, is popular throughout Japan, so what makes Izumo soba a standout? Well, the locals will tell you that, first of all, their soba is made with unhulled buckwheat. The use of the whole grain gives the the soba a rich, deep flavor, a darker color and an appealing, chewy texture. It's also more nutritious, of course, and some Izumo noodles benefit from the addition of powdered green tea, which is a real taste treat. Izumo soba is usually served in a style called warigo-soba. The soba is placed into three small bowls that are stacked one on top of the other. Sliced green onion and other condiments are placed on the noodles, and then broth is poured into the bowls. It's a light, healthy and delicious lunch. The only problem you'll have is limiting yourself to those first three bowls.
